Maryland crabs vs. New England clams

BALTIMORE - Ok, the Baltimore Ravens and New England Patriots took it the field Sunday, but we took a look at the real battle the New England clam verses the Maryland crab.

We all know the real answer, but we went to Rusty Scupper for an expert opinion.

“It’s like the battle of the crustaceans!” said Rusty Scupper General Manager Ed Prutzer.

“You have crab cakes. Have you ever heard of a clam cake?” said Ed. “Crab stuffed shrimp. Any such thing as clam stuffed shrimp?”

Which crustacean wins the battle of the soup?

“You have delicious cream of crab soup, Maryland crab soup,” said Ed.

Clearly the crab wins this battle. Claws down!

Baltimore Rusty Scupper’s Chef Mark Maranda shared his Cream of Crab Soup recipe with The List.

Cream of Crab Soup

(Recipe yields 1 gallon of soup)

Equipment

  • 1 Large mixing bowl
  • 1 Wire whisk
  • 1 Measuring cup
  • 1 Pot

Ingredients

  • 1 lb Butter
  • 1 lb Flour
  • ¼ cup Crab Base
  • 1 cup Sherry
  • 1 Tbl Old Bay
  • 1 tsp White pepper
  • 1 tsp Salt
  • 1 cup Whole Milk
  • 2 qt Heavy Cream
  • 2 qt Crab Stock*

Instructions

  1. Melt butter add flour and cook for 5 minutes over medium heat do not brown.
  2. Add crab base and seasoning
  3. Slowly ass crab stock and milk working with whisk
  4. Bring to Boil and reduce to simmer add heavy cream.
  5. Simmer for 30 minutes stir occasionally
  6. Place in ice bath and cool reserve for service.

*NOTE: Water can be substituted for crab stock
